Coffee is not the point
The sentence we keep coming back to, and what it costs us in practice.
It is not a slogan against coffee. Our coffee is serious — we can argue about water temperature for an hour. But the coffee is a pretext to be in the same room as somebody.
In practice this costs us: bigger tables, lower seat turnover, more chairs than a pure coffee bar would buy.
We think that is the right trade. A room that makes money and nobody lingers in is not the room we set out to build.
